Cherry Wine Sauce


Thanks to Heidi V. for sharing this rich sauce. It goes well with poultry, such as grilled chicken breasts.


1 tablespoon butter
1 tablespoon minced onion
½ cup red wine
1 ½ cup low sodium chicken broth
1 cup Bella Viva Dried Rainer Cherries
1 tablespoon cornstarch
1 tablespoon water
¼ teaspoon salt


Put 1 tablespoon of butter and 1 tablespoon of minced onion into a saucepan. Melt and cook until onions are tender. Add ½ cup of red wine and 1 ½ cup of low sodium chicken broth. Simmer until mixture is reduced by half in volume. Add ½ cup of whole Bella Viva Dried Rainier Cherries and ½ cup chopped Bella Viva Dried Rainier Cherries. Bring to boil, then reduce heat and simmer for 5 minutes. In a bowl, mix until smooth. Gradually add 1 tablespoon of cornstarch, 1 tablespoon of water, and ¼ teaspoon of salt. Serve warm over poultry.
