In the Kitchen: Mango-Pineapple Energy Bars
These sweet and tropical energy bars can be enjoyed as a morning treat with your coffee or tea, as a snack while enjoying the outdoors, or as a dessert when you want a taste of paradise. This recipe features Bella Viva Orchards’ Organic Mangoes, Pineapple and Coconut, our Raw California Almonds and our Organic Brown Flax Seed. This recipe is flexible, so try it with your favorite combination of our Diced Natural Dried Fruits.

1 to 1 ¼ cup raw Bella Viva Orchards California Almonds
1 to 1 ¼ cup Bella Viva Orchards Dried Pineapple
1 cup Bella Viva Orchards Dried Mangoes, coarsely chopped
½ to 1 cup Bella Viva Orchards Deglet Noor Pitted Dates
½ cup shredded Bella Viva Orchards Coconut (Sweetened or Unsweetened)
1 Tablespoon Bella Viva Orchards Organic Brown Flax Seed
¼ cup coconut oil + 2 teaspoons (to coat pan)
Lightly coat an 8X8-inch pan with 2 teaspoons coconut oil. Line pan with parchment paper, allowing paper to drape over edges. Lightly coat parchment paper with additional coconut oil.
Place almonds in a food processor and pulse just until nuts are coarsely chopped. Remove and set aside.
Place Dried Pineapple in the processor and pulse until coarsely chopped. Remove and add to almonds.
Add remaining ingredients and pulse a few times to combine, then let food processor run until mixture sticks together. Add almonds and pineapple back to the fruit mixture and pulse a few times to combine.
Press mixture into prepared pan, cover with plastic wrap and let chill for about 2 hours.
Slice into rectangles. Store between layers of parchment paper to prevent sticking.
