In the Kitchen: Almond Flour

Chocolate Chip Cookies with Almond Flour:

Another great thing about almonds is that they are able to be used in so many different ways. Almond flour and almond meal are made when the almonds are finely ground into powders; the flour consisting only the insides of the blanched meats and the meal consisting of the powdered whole almonds, including the skins. In many cases and especially in most cookie recipes, almond flour along with almond meal can be used in place of wheat or other flour in baking recipes. They are both naturally gluten-free as well.

The following is a recipe for some super good chocolate chip cookies made with Bella Viva almond flour:


Cook Time: 35 mins
Serves: 8

Ingredients:
½ cup butter, softened
¼ cup coconut oil
½ cup brown sugar
2 teaspoons vanilla extract
2 large eggs
½ teaspoon baking soda
½ teaspoon salt
3 cups Bella Viva almond flour
1 ⅓ cups semi-sweet chocolate chips
1 cup toasted walnuts, almonds or pecans pieces

Instructions:
Preheat oven to 350 degrees. Lightly spray cookie sheet with nonstick cooking oil.

In large bowl, combine the butter, coconut oil, and brown sugar. Add in the vanilla and eggs. Mix until smooth.

Mix in the baking soda and salt. Add the almond flour, one cup at a time, mixing well after each is added. Poor in chocolate chips and nuts of choice.

Place separate tablespoon-sized dough rounds on the sprayed cookie sheet about three or so inches between each. Bake for 12-14 minutes or until edges are golden brown. Carefully remove from oven and let them cool for 5-7 minutes. Take them off of cookie sheet and place on decorative plate. Serve and enjoy!
