In the Kitchen: Bella Viva Orchards Fig, Almond and Ricotta Toasts

This Mediterranean-inspired appetizer recipe, featuring Bella Viva Orchards’ Certified Organic Dried Black Figs and Certified Organic Raw Almonds, is easy enough to make on a weeknight and special enough to be served for company. By using Dried Figs, you’re packing an extra concentrated punch of sweet, earthy flavor.

Yields: 12 small toasts

Cook time: 15 minutes
Total Time: 35 minutes (includes cooling time)

Ingredients:

1 cup Bella Viva Orchards Certified Organic Dried Black Figs (about 12)
¾ cup water
½ cup Bella Viva Orchards Certified Organic Raw Almonds, roughly chopped
½ cup whole milk ricotta cheese (fresh is best)
12 slices thin baguette
Pinches of flaky sea salt, such as Fleur de Sel or Maldon

Instructions:

Preheat oven to 350 degrees F.

Cut the Figs in half and place in a small saucepan. Cover with ¾ cup water, using more if needed. Over medium-high heat, bring the Fig mixture just to a boil. Lower heat and simmer for about 7 minutes, stirring occasionally until fruit is soft. Add more water if needed so fruit does not dry. Remove from heat and set aside.

Place baguette slices and chopped Almonds on a cookie sheet. Toast about 5 to 7 minutes, until golden. Remove from oven and allow to cool slightly.

Spread ricotta cheese on toasted baguette slices, then top with two halves of the Figs with a little liquid. Sprinkle with toasted Almonds and finish each toast with a pinch of flaky sea salt.
