In the Kitchen: Broccoli Salad

This easy and tasty salad recipe featuring Bella Viva Orchards’ Dried Cranberries, Roasted Salted Sunflower Seeds and Chopped Almonds brings a punch of crunchy greens and good nutrition to spring days. Your whole family will love it!

¼ cup best quality mayonnaise
2 tablespoons apple cider vinegar
2 tablespoons honey or agave syrup
Kosher salt and freshly ground black pepper to taste
2 cups fresh broccoli florets and stems (sliced about ½” thick)
½ – ¾ cup Bella Viva Orchards Dried Cranberries
⅓ cup Bella Viva Orchards Roasted Salted Sunflower Seeds
⅓ cup Bella Viva Orchards Chopped Almonds
¼ cup diced red onion
½ cup crumbled mild blue cheese or gorgonzola cheese


In small bowl, add some ice cubes to cold water and add diced red onion. Allow to soak about 15 minutes and drain. (This takes strong bite from the onions.)

To make dressing, in large bowl, whisk mayonnaise, vinegar and honey. Season with salt and pepper to taste.

To finish salad, add broccoli, Dried Cranberries , Sunflower Seeds, Chopped Almonds, drained red onions and cheese to dressing. Toss to mix thoroughly. Cover and refrigerate about 30 minutes to allow flavors to develop. Serve right away or cover tightly and keep in the fridge for up to 24 hours.
