In the Kitchen: Oatmeal Raisin Walnut Cookies (GF)

These gluten-free cookies, featuring Bella Viva Orchards Almond Flour, Organic Thompson Seedless Raisins, Walnut Pieces, Organic Flaxseed Meal and our Orange or Clover Honey, are among our year-round favorites. We’re sure that once you make a batch, you’ll be whipping out your cookie sheets before long for a healthier repeat performance! Yields: about 1 ½ dozen cookies

Total Time: 27 minutes

Ingredients:

¼ cup Bella Viva Orchards Orange or Clover Honey
1 large egg (room temperature)
2 tablespoons melted coconut oil
2 teaspoons pure vanilla extract
1 cup Bella Viva Orchards Almond Flour
1 cup old fashioned oats
½ cup Organic Flaxseed Meal
¾ teaspoon cinnamon
½ teaspoon baking soda (fresh is best)
¼ teaspoon fine sea salt
1/8 teaspoon nutmeg
1/3 cup Bella Viva Orchards Organic Thompson Seedless Raisins
1/3 cup Bella Viva Orchards Walnut Pieces

Instructions:

Preheat oven to 350 degrees F. Line two cookie sheets with parchment paper.

In a large bowl, whisk together egg, Honey, coconut oil and vanilla extract until smooth.

Stir in Almond Flour, Flaxseed Meal, cinnamon, baking soda, salt and nutmeg. Add Raisins and Walnut Pieces.

Scoop out heaping tablespoons and roll each one into a ball. Place about 2 inches apart on the parchment-lined cookie sheets.

Bake for about 12 minutes, until the cookies are golden brown. The texture will be soft.

Remove from oven and allow to cool a few moments, then press each cookie slightly to flatten, if desired. Cool completely on the cookie sheets.

These cookies will keep in an airtight container for up to 3 days.
