Cranberry Energy Bites

Easy to Make Cranberry Energy Bites:

These delicious cranberry energy bites are packed with dried cranberries, chia seeds, ground flax seeds, almonds and more, making them the perfect healthy snack! They will provide you with some of the best nutrients such as protein, fiber, iron, omega 3’s and fatty acids. Not to mention, these organic bites are easy to make, convenient for on-the-go, easy to store and can last a while if kept refrigerated or frozen.


Total Time: 30 minutes
Serves: 20+ Bites

Yields: Two dozen
Prep Time: 10 – 15 min.
Bake Time: 10 – 15 min.

Ingredients:
2 cups of Quick Oats
⅔ cups of Chopped Almonds
⅔ cups of Sweetened Coconut Shreds
2 tablespoons ground flax seed (brown)
½ cup of honey
1 cup of Peanut Butter (sub. almond or cashew butter if you’d rather)
2 tablespoons of Chia Seeds
⅔ cups of Cranberries

Instructions:

Preheat oven to 350° F.

Line a baking sheet with parchment paper.

Cover sheet with quick oats, almonds and coconut and bake for 10 – 15 minutes, stirring after 5 minutes. Let cool.

Microwave peanut butter or butter of choice in large bowl for 20-30 seconds until thin and easy to stir.

Combine and add chia seeds, flax seeds, cranberries and honey to the melted peanut butter. Mix together.

Slowly add in baked mix a bit at a time until fully incorporated.

Shape into spoon-sized balls, refrigerate then enjoy!

Tip: Freeze to keep longer.
