Walnut Pastila - Pitted Prunes from Bella Viva Orchards

Walnut Pastila with Bella Viva Prunes:

With the holidays quickly approaching, you can never have too many recipes on hand. Sure, prunes are excellent all their own, but throw them into a dish and you’ve taken cooking to a whole new flavor level. The following recipe is for two scrumptious walnut pastila but beware, you might find yourself surrounded with family begging for the recipe after just one slice:


Total time: 30 min
Serves: 6

Ingredients:
2 cups Bella Viva Dried, Pitted Prunes, finely chopped
1 cup sugar
¼ cup Topanga Quality Raw, Unfiltered Honey
Grated zest of 1 orange
½ cup fresh orange juice
2 ½ cups Bella Viva Shelled Organic Walnuts or other Bella Viva nut of choice
¾ cup shredded, Bella Viva Sweetened Coconut

Instructions:
Put Bella Viva Dried, Pitted Prunes, sugar, Topanga Quality Raw, Unfiltered Honey, orange zest and orange juice in pot. Bring to a boil. Cook and stir constantly on medium heat until all prunes are softened and everything seems like a paste. This will take approx. 10 mins.

Place a little bit in the refrigerator for 2 to 3 minutes to test if it’s ready. If it’s firm enough to hold its shape, you’re good to go!

Remove from the stove and add in the walnuts or other Bella Viva nut of choice. Let cool some.

Spread out two pieces of baking/parchment paper. Spread the Bella Viva coconut as evenly as possible over the two pieces of baking/parchment paper.

Once mixture can safely be handled, carefully split the amount in two and mold into two logs. Roll them around in the coconut and then roll up in the paper.

Refrigerate until all is settled. Unroll from paper and thinly slice to serve and enjoy! Yields 8-10 servings per log.
