In the Kitchen: Lemon Yogurt Blueberry Bread
Bella Viva Orchards’ Dried Lemon Powder makes a great flavor partner for our Dried Blueberries in this easy and addictive bread. You can enjoy this sweet and tangy bread for breakfast, with a cuppa coffee, or topped with fresh mixed berries and whipped cream for dessert.
3 cups all-purpose flour 1 teaspoon salt 1 teaspoon baking soda ½ teaspoon baking powder 3 eggs 1 cup canola or vegetable oil 3 tablespoons Bella Viva Orchards Dried Lemon Powder 1 ¾ cups granulated sugar 1 tablespoon plus 1 teaspoon lemon extract 2 cups lemon yogurt (blended) 1 cup Bella Viva Orchards Dried Blueberries Cooking spray
Preheat oven to 325 degrees F.
In a medium bowl, combine flour, salt, baking soda and baking powder and whisk to combine.
In a large bowl, beat eggs. Add oil, Dried Lemon Powder, sugar and lemon extract. Allow to sit a few minutes to rehydrate the Lemon Powder, then whisk until mixture is smooth. Stir in yogurt and Dried Blueberries. Add flour mixture and stir to blend.
Spray two 9 x 5 loaf pans with cooking spray. Divide batter evenly between pans.
Bake 1 hour, or until a toothpick inserted in the center of the bread comes out clean. Remove from oven and cool bread in pans at least 10 minutes before removing from pans. Let bread cool thoroughly before enjoying.
This bread is sure to be devoured right away, but if you’re lucky enough to have any left, it can be wrapped in foil and kept up to a week or frozen for up to 6 months.
