Healthy, Easy, and Delicious Spring Salad:
This fresh and delicious spring salad makes the perfect side dish or meal all by itself. Enjoy the sweet and chewy textures of dried blueberries and cranberries along with a crunchy boost in protein from our sliced almonds and sunflower seeds. Your taste buds will thank you for the sweet bursting flavors of fresh strawberries combined with the tasty zing from a homemade balsamic vinaigrette. This salad is sure to add an extra spring in your step!

8 oz. fresh spinach leaves
5 fresh strawberries sliced
4 oz. feta cheese crumbles
2 tablespoons of Bella Viva Sliced Almonds
2 tablespoons of Bella Viva Sunflower Seeds
2 tablespoons of Bella Viva Dried Blueberries
Ingredients (Balsamic Vinaigrette):
½ cup olive oil
⅓ cup balsamic vinegar
¼ cup finely minced garlic
1 tsp. dijon mustard
1 Tbs. clover honey (optional)
⅓ tsp. Salt
¼ tsp. Pepper
1 tsp. Basil
In large bowl, add all salad ingredients together. Set aside.
In small bowl, add together all balsamic vinaigrette dressing ingredients.
Carefully mix dressing ingredients together with spoon or whisk.
Slowly pour dressing over salad tossing salad gently to distribute dressing and salad ingredients evenly.
Serve as side or as a meal. Enjoy!
