In the Kitchen: Persimmon Walnut Energy Bits
These sweet and nutritious energy bits make great grab and go treats for the whole family! A healthy addition to teatime or stashed away in your desk or gym bag, they’re portable, fun and easy to make! This no-bake recipe features Bella Viva Orchards’ Dried Persimmons, Walnut Pieces, Organic Brown Flax Seed and Coconut.
Coarsely chop Dried Persimmons. Place in large bowl and add oats and ½ cup hot water, stirring to evenly wet the fruit. Let sit for about 10 minutes.
Add remaining ingredients except honey and Dried Coconut. Place about half of mixture in food processor and pulse to make a thick paste. It’s okay to leave some fruit and nut chunks. Return pulsed mixture to bowl and add honey, stirring to incorporate well. If needed, add a little more water until mixture holds together well.
Place mixture in fridge for about an hour.
Remove from fridge and scoop out two tablespoons for each portion. With your hands, roll each portion into a ball, then roll in Dried Coconut.
Enjoy right way or store in the fridge in an airtight container for up to a week.
