Mango Ginger Sauce

This sauce is an excellent addition to any salmon or pork recipe, thank you Heidi V. for sharing.

Ingredients:

½ cup minced Bella Viva Dried Mango
3 tablespoon butter
1 tablespoon minced onion
1 ½ cup low-sodium chicken broth
¼ tsp. orange pith
¼ tsp. fresh ginger, minced
1 tsp. salt
2 tablespoon cornstarch

Instructions

Mince ½ cup Bella Viva Dried Mangos and place in a one-cup measuring cup. Soak with very hot water to soften them and set aside. In a saucepan melt 1 tablespoon of butter, add onion and cook until tender. Add 1 ½ cup low-sodium chicken broth, ¼ tsp. orange pith, ¼ tsp. fresh ginger, minced, ½ tsp. salt, minced mangos and water to a sauce pan. Bring to boil, and simmer until the volume is reduced by half.

Add 1 tablespoon cornstarch, 1 tablespoon water and ¼ teaspoon salt to a mixing bowl until smooth. Combine this to mango mixture and stir until thickened. Add 1 tsp. butter and 1 tablespoon water stirring constantly. Finally add the last1 tsp. of butter and 1 tablespoon of water, continue to stir. The last two steps are done separately so that the butter blends in smoothly.

Serve warm over salmon or pork and enjoy!
